The manual tradition

At harvest time, which is usually in the middle weeks of September but in any case, subject to the season’s actual conditions, only the healthy and ripe bunches are picked. The must is fermented in temperature-controlled steel vats.
Fermentation in contact with the skins (in the case of reds) entails frequent pumping over to leach the grapes’ organoleptic characteristics into the wine. Maturation takes places in stainless steel tanks and oak barrels, followed by ageing in bottles.
